Experimental Meals with Hollie

I could start this off by pretending that I haven't missed like a hundred days worth of blogs... so... yeah I think I will haha (there's been a lot going on lately!)...

SO...

Did some yard work, been doing a lot of running, been getting in a little kickboxing, and started a yoga routine today.  I have basically found that my former plan did not necessarily work out that well.  I have been loving running more and more and building up my endurance which as left me too tired for other work outs as well.  But that's okay! I'm going to just focus on getting at LEAST thirty minutes of SOMETHING in a day. 

I have found that it's really all about developing habits and then building on those habits.  On days that I feel exhausted after work, I can either nap or work out. On days that I work out, I find myself feeling better and more energized later.  All those magazines and commercials weren't lying!!

I've also been seeing some impact on the kids I work with! We have been talking about how, when you feel positive, you think positive, and then you do positive things.  Part of what we have talked about (and I had the pleasure of leading this discussion) was eating well to make yourself feel good!  So we put together menus of their favorite foods and worked together to make them healthier by substituting healthier options.  It's funny now because they like to come up to me during lunch and see what I'm eating.

By the way, for breakfast this morning, I had some pumpkin seed and flax cereal that we found from costco and it is actually VERY filling! Had a grapefruit cup for snack, a portabello/goat cheese/wheat sandwhich thin sandwich for lunch along with peach greek yogurt and rice chip snacks.  A piece of beef jerky when I got home got me through the work out and diet snapple tea has been my new favorite treat.  Finally, for dinner, I did what the main part of this blog post is about...

I took a lot of my favorite veggies and threw them in a pot with ground turkey and spaghetti sauce, and then made some whole wheat pasta.  The veggies included corn, peas, spinach, onion, and mushrooms... delicious!

Basically, I have been taking healthy things that I like and trying to combine them in fun ways. Sometimes they work, sometimes I find that there are better ways to mix things.  One new snack I love is a pear chopped up topped with cottage cheese and mixed with dried cranberries.  The point is, mix it up and make it fun! If you're having fun eating healthy, you'll be more likely to do it more often!
